The starting point of Blázquez is the more than 30,000 hectares of green pastures spread over the regions of Extremadura, Andalusia and the province of Salamanca, a mantle that shelters the free-range breeding of a selection of pigs with exceptional genetics and nutrition. Their evolution over all these years has established them in the elite of gastronomy and Haute Cuisine. For all these reasons, Blázquez evokes sublime sensations through their premium line of Iberico. They start from the legacy of a couple of young visionaries, Isidoro Blázquez and his wife Teresa Martín, who in 1932 decided to take a risk and germinate in Salamanca the seed of a project that today has acquired an international reputation and is a benchmark in the sector.
Outrageously decadent, but great value, too, this is a cured black pudding. with a buttery texture at room temperature, and a rich, smoky flavour, reminiscent of chorizo, this is a black pudding like no other. This variety, made in Blazquez of Salamanca who also are a producer of some of the finest iberico hams, is made using meat from Iberico pigs, fed with a diet of acorns in season (bellota) and is cured for a period of 60 days, so that whilst it can be used in many recipes, it can also be eaten uncooked, simply sliced and enjoyed with your favourite tipple. We recommend slicing it thinly and enjoying it with crusty bread, cornichons and a good red wine. If you taste this, and do not like it, seek psychiatric help!
