Sobrasada de Mallorca is a soft, spreadable cured pork sausage that originates in the Balearic Islands, made from finely minced pork seasoned generously with paprika to create its distinctive deep red colour and warm, smoky flavour. Unlike firmer cured meats, sobrasada has a wonderfully soft, almost pâté-like texture, making it perfect for spreading thickly onto warm, toasted bread. It’s also fantastic melted into scrambled eggs, stirred through rice dishes, or used to add depth to a stew.
