Amaretti morbidi are the soft kind of amaretti: crisp and crackled on the outside, moist and chewy within, with the deep, slightly bitter almond flavour that gives them their name. Rippa’s come in a 150g metal tin that is worth keeping once the biscuits have gone.
Pasticceria Rippa was founded in 1958 by brothers Sergio and Marco Rippa in Sale, a small town in the province of Alessandria in Piedmont, and it still works from its original premises. Sergio started as an apprentice before he was fourteen, learning from the pastry chef in nearby Tortona who first created the Bacio di Dama, and the bakery is still known for its baci di dama and soft amaretti, made to traditional recipes.
Very good with an espresso or a glass of dessert wine, crumbled over ice cream, or as a present that looks the part.
