Transferring the Ibérico experience to the table. A century of traditional flavour in haute cuisine is only achieved through hard work, commitment, and a path with no detours towards the highest quality. A little over 100 years ago, Mr Fidel Sánchez shaped the business that is dedicated to the marketing of Ibérico products. Times have greatly changed since then and in the 60s, his son, Mr Florencio, began to professionalize the preparation process of Ibérico pig products.

Currently, the family business is run by the third generation of the family. Headed by Eva, Florencio and Javier, we continue to develop the project, whose core idea is to deliver products of a better quality each day.  FISAN represents a century of respect for the tradition and culture of our Ibérico products, as well as dedication to their constant improvement through innovation. Alongside this, our business progresses thanks to the efforts of our team, made up of people who are committed to the company’s goals, which begin in the dehesa and end with the tasting and enjoyment of our products.

Surrounded by three mountain ranges (Gredos, Béjar, and Francia), Campillo de Salvatierra has its own microclimate, which is mainly characterized by long, dry, cold winters with a short, dry, “warm” season. This aptness for the drying and curing of meat products was why, already hundreds of years ago, the preparation of Ibérico pork products (especially hams) gradually became consolidated as the main source of income for this very rural area of Salamanca. FISAN’s headquarters and facilities are located in Campillo de Salvatierra (a minor local entity 200 m from Guijuelo).

An authentic Fisan ham, well carved, is like a work of sculpted art and astonishes ham lovers everywhere with the unique nuances of the most exclusive ham in the world. Cured for 42 months in Guijuelo, these hams are truly exceptional, characterised by a sweet and savoury flavour due to their long cure.

The black label, a guarantee of excellence and quality, also validates the product as acorn-fed 100% ibérico. Only products with the black label can be called pata negra, or “black hoof”.
