These are François Doucet’s classic pâtes de fruits, five fruit jellies dusted in sugar: apricot, pear, mandarin, strawberry and raspberry. Each one is made with real fruit pulp – around half the recipe – cooked slowly with sugar, glucose syrup and pectin, and given a light lift with citric acid. The result is soft, true to the fruit and not too sweet, in the traditional French style. A 200g box.
François Doucet Confiseur has been making confectionery in Oraison, in the Alpes-de-Haute-Provence, since 1969. The founder came from two confectionery families: on one side a descendant of Théodore Vieillard, who created the original Auvergne fruit paste, and on the other a grandson of chocolatier Léon Mazet – which is why fruit jellies and candied fruit sit at the heart of the range. The company still sources most of its fruit from Provence and holds the Entreprise du Patrimoine Vivant label for living heritage craftsmanship.
