Crisp, crunchy aperitif biscuits made with butter and AOP Ossau-Iraty pure sheep’s milk cheese (18%), seasoned with piment d’Espelette, the mild, fruity chilli grown around the village of Espelette in the Basque Country. The cheese brings a nutty richness and the pepper a soft, rounded warmth rather than real heat. An 80g box.
Okina is a small artisan bakery in Idaux-Mendy, in the Soule, the smallest of the Basque provinces on the French side of the Pyrenees. Pastry chef Hervé Lanouguère founded it in 2004, first making sweet biscuits and Basque cakes, and began making savoury cheese biscuits in 2009; Hervé Boissinot joined him as co-founder in 2013. They use simple recipes and local ingredients wherever possible, with no colourings or preservatives.
Put them out with drinks – a Basque cider, a glass of Irouléguy or a cold beer – or serve them alongside charcuterie and sheep’s cheese.
Ingredients: wheat flour, AOP Ossau-Iraty sheep’s cheese (18%), butter, milk, sugar, salt, Espelette pepper (0.5%). Contains wheat and milk. May contain hazelnuts, almonds and eggs.
