These are Okina’s original cheese biscuits: small, crunchy aperitif biscuits made with wheat flour, butter, milk and AOP Ossau-Iraty, the pure sheep’s milk cheese of the French Basque Country and Béarn, which makes up 18% of the recipe. The cheese comes from the local fromagerie Azkorria and gives the biscuits the gentle, nutty, almost hazelnut flavour typical of sheep’s cheese. An 80g box.

Okina is a small artisan bakery in Idaux-Mendy, in the Soule, the smallest of the Basque provinces on the French side of the Pyrenees. Pastry chef Hervé Lanouguère founded it in 2004, first making sweet biscuits and Basque cakes, and began making savoury cheese biscuits in 2009; Hervé Boissinot joined him as co-founder in 2013. They use simple recipes and local ingredients wherever possible, with no colourings or preservatives.

Very good with a glass of cider, txakoli or a crisp white wine, or served on the cheeseboard next to a wedge of Ossau-Iraty and some black cherry jam.
