These florentines are made the traditional way, without flour or eggs: flaked almonds, currants and candied orange peel are bound with butter, crème fraîche and honey into a thin nougatine, then set with salted butter caramel made with Guérande salt and coated on one side in French milk chocolate (38% cocoa). The result is crunchy, buttery and rich, with the salt keeping the caramel in check. Twelve florentines in a 100g box.
The florentine is said to date back to the Renaissance, when it was made by the cook of Anne de Bretagne. The recipe was revived in 1965 by the chocolatier Michel Chatillon, and since 2020 Maison de Florentins has been run by Yann Ducarouge from its artisan biscuit workshop at La Chapelle-sur-Erdre, just outside Nantes. They use mainly local, independent suppliers and make everything without preservatives, artificial flavourings or palm oil.
Very good with coffee or tea, and a sure thing for anyone with a sweet tooth.
