Marabissi’s take on the Tuscan cantuccio swaps almonds for pistachios – 23% of the biscuit – baked into a dough of wheat flour, sugar, eggs and butter with a little vanilla and sea salt. Twice baked in the traditional way, they are crisp and crumbly, with the green, gently sweet flavour of pistachio all the way through. A 120g pack.
Marabissi was started more than 60 years ago in Chianciano Terme, in the Siena hills of southern Tuscany, by Signora Jole, who baked cantucci to an old family recipe. Three generations on, the family business has grown from a small pastry shop into one of Tuscany’s best-known biscuit makers, still working by hand in the Tuscan tradition with carefully chosen ingredients.
Very good with coffee, or dipped in Vin Santo or a sweet wine after dinner. A nice change for anyone who already knows the almond ones.
