Embutidos Entrepeñas is a family business from the mountains of León, making artisan charcuterie the same way they have for over 60 years and four generations. Their factory sits at 1,200 metres above sea level in Geras de Gordón, where long, dry winters and frequent frosts create ideal natural curing conditions. Working without chemical additives, they rely instead on traditional methods — salting, smoking, seasoning and slow air-drying — to produce charcuterie of genuine depth and character. Their cecina de León PGI and chorizo de Geras are considered benchmarks of Leonese gastronomy, with admirers stretching from the local barrio to the Spanish royal household.
Morcilla Matachana is one of León’s most treasured charcuterie traditions – a rich, spreadable blood sausage unlike any other in Spain. Made by the Matachana family, whose name has become synonymous with this style of morcilla over five generations, it is crafted from pork blood, onion, lard, breadcrumb, pimentón, garlic and salt, with no cereals or fillers. Unlike its Burgos cousin, the texture is silky and deeply savoury, made to be eaten warm and spread generously over crusty bread. A true taste of Castilla y León, and an unmissable addition to any Spanish charcuterie spread.
Serving suggestions
You can spread it on bread, or warm it up up and serve with grilled asparagus and a poached egg. Fabulous to enjoy with a slice of tortilla, or for a very special tapa, try it mixed with crusty croutons and caramelised onions. Uses are endless.
Gently warm the morcilla in a pan or microwave until soft and spreadable. The classic Leonese way is to eat it straight from the jar, spread thickly onto crusty toasted bread – simple, and hard to beat. It also works beautifully stirred through scrambled eggs, folded into an empanada filling, or used to enrich a bean stew such as fabada. For something a little more refined, try it on a crostini with a slick of quince paste or a few shards of Valdeón cheese.
