Choví started in 1953, in a quaint family-owned grocery store situated in Benifaió, Valencia, managed by Vicente Choví and his relatives. Here the Choví family traditionally prepared homemade meatballs served with allioli.

Alioli is essentially a mix of olive oil and garlic – we have used purple garlic to give a rich garlicky flavour without the bitterness of some other garlic, and extra-virgin olive oil to give a full-flavoured mayonnaise. It can be used with all sorts of meals: fish and seafood, meats, vegetables – and it is very good with chips! It is also served with Paellas and Fideuas (the Catalan pasta dish with seafood) – delicious!

The names mean “garlic and oil” in Catalan and Provençal. It is particularly associated with the cuisines of the Mediterranean coasts of Spain

Description

Chovi “El del mortera” is prepared using garlic, oil, egg, lemon juice and salt; pasteurised and in a glass jar.  Ambient storage but refrigerate once opened.  Alioli is essentially a mix of olive oil and garlic – using purple garlic to give a rich garlicky flavour without the bitterness of some other garlic.
