Cumberland sauce is the classic English partner for cold meats – Elizabeth David called it the best of all sauces for cold meat – and this is a very good one. Hawkshead Relish make theirs with redcurrant jelly, damson wine, orange and lemon juice and orange zest, sharpened with mustard and a little cayenne pepper. It is fruity, tangy and gently spiced, and sits beautifully alongside ham, turkey, duck and game, or with pâtés, terrines and a cheeseboard. A spoonful stirred into the gravy for the roast works well too.
Hawkshead Relish was started in 1999 by Mark and Maria Whitehead, who made relishes and chutneys for the café they ran in the village of Hawkshead. When foot and mouth emptied the Lakes of visitors in 2001, they turned the chutneys into the business, and today they make more than 100 products, all still by hand in traditional open pans near Esthwaite Water. They have won more than 60 Great Taste Awards, and Mark and Maria were both awarded MBEs for their services to the Cumbrian food industry.
