In 1840 a chocolate workshop was born in Sant Sadurní d’Anoia. Situated 40km from Barcelona, Sant Sadurní is now known the world over as the capital of cava, the fizzy wine which is largely made in the Penedès region where Sant Sadurní resides. However, Casa Simón has been making artisanal chocolate since 1840, before the first bottle of cava ever appeared in Sant Sadurní.
Xavier Coll, fifth generation, chose to develop a large range of smaller chocolate products, as well as chocolate for Christmas and Easter, which helped to consolidate the company commercially, making it into a preferred supplier for many sweet shops and bakeries.
Simón Coll started to make chocolate with a higher percentage of cocoa in response to growing consumer demand, as well as producing chocolate and “turrons” (nougat) that used the country’s excellent nuts.
In contrast to the normal practice today of buying ready-made cocoa paste, Simón Coll selects its cocoa beans from several different countries and makes its own chocolate from scratch. From Africa, they use cocoa from Ghana for its strong, uniform taste; from the Americas, they buy aromatic cocoa.
Choosing an excellent raw material and using a variety of different plants from the best locations are the basic requirements of producing a higher-quality product. Once at the factory, the process starts with the whole cocoa beans being toasted.
The selection of the cocoa beans and their own toasting process are the initial key factors that will later help to define the sensory profile of the excellent chocolate that is known for.
