Chistorra is a long, thin cooking chorizo-style sausage from La Rioja, seasoned generously with pimentón to give it a warm, smoky depth of flavour. Thinner and quicker to cook than a standard chorizo, it’s brilliant simply fried or grilled until crisp and served straight away on a baguette with a little allioli – a classic Spanish street food combination.
