Tejas are the famous biscuits of Tolosa, in the Basque province of Gipuzkoa – very thin, crisp almond wafers, curved like the roof tiles they are named after. Rafa Gorrotxategi makes them by hand with almonds, whole cane sugar and butter, so they are buttery and nutty with a proper snap. This 150g box is a mixed assortment of three flavours – almond, caramel and orange.
Rafa Gorrotxategi is one of the best-known confectioners in Tolosa, and the town’s tejas and cigarrillos (rolled wafers) are its speciality.
Lovely with coffee, or served alongside ice cream, a crema catalana or a glass of Pedro Ximénez after dinner.
