Boxing Day Migas (or any other day of the year!)

A real perennial favourite in the restaurant. Not just for breakfast. A great buffet dish or evening meal or snack. Flavours are amazing and a great way to use up odds and ends of meats and sausages

75ml of Nunez de Prado Extra Virgin Olive Oil
Breadcrumbs from 8 slices of stale bread (or equivalent in dried Panko breadcrumbs)
2 Lunya Chorizo sausages, finely chopped
2 Brindisa Morcilla, finely chopped
2 Rashers of streaky bacon/panceta
4 tablespoons of shredded brown turkey meat
Half a teaspoon of oregano (or sage)
1 small brown onion, finely chopped
Half a red pepper, finely chopped
Half a green pepper finely chopped
Salt and black pepper to taste

In a large frying pan (or wok), add a tablespoon of the olive oil and add the panceta, chorizo and morcilla, fry, stirring constantly for 5 minutes until starting to colour and oils are released (do not worry about the meat breaking up
Add the rest of the oil and stir well
Add the vegetables and cook for another 5 minutes until softened and coloured
Add the turkey meat and stir
Add the breadcrumbs and fry for another 5 minutes, until they have absorbed all of the oil and are coloured
Season to taste
Serve topped with a poached egg
