Moritz Chicken

A superb idea, borrowed from our very good friends at the Moritz Factory in Barcelona. Home to the sensational beer and also home to one of Barcelona’s very best tapas bars, event space and Michelin starred restaurant. In their bar, they have created a whole chicken, marinated in a glorious blend of herbs, spice and other ingredients (we’d have to kill you if we told you!).

Now, in Liverpool, every Sunday, you can have the very same dish in Lunya, Hanover Street, by pre-order. we marinade the chicken for 48 hours, and then roast it on a high heat over a can of Moritz beer. This produces the most flavoursome and succulent roast chicken you are likely to have. We then reduce down the juices to a glorious umami-rich, beer-infused sauce. Just check out those pictures.

We serve it whole at the table before cutting it into portions. Perfect for two to share (half each, and with the right accompaniments, you can create a Catalan roast dinner – we recommend Patatas Bravas, Escalivada and our mushrooms, or up to 8 can share a small tapas portion with your favourite dishes. Don’t forget to get some sourdough bread to mop up that sauce.
