Description

Vidiago is a very pleasant cows milk cheese, which provides a good balance to a cheese platter.

Made with milk from Vidiago, a village in Llanes where cows graze in pastures by the sea, which makes the flavour smooth and distinctive. It is a semi-cured cheese with no additives or preservatives, with a clean cut and a smooth texture. Used extensively in cooking, it is often used to make the traditional Asturias ‘cachopo’ (cordon bleu).

Its traditional process begins by mixing milk with rennet and ferments. After resting for approximately 40 minutes, the curd is obtained. This is cut and beaten with lyres to obtain small and homogeneous grains that are later pressed in cylindrical molds. The pieces are turned several times until all the whey is lost to continue with the salting and maturation process for a period of 3 weeks.

The result is a very lactic and tasty Vidiago cheese, soft and creamy, ideal to pair with both sweet and salty.
