An artisan unpasteurised sheep’s milk Manchego cheese named after the source of the Guadiana River. This river source creates the stunning wetlands of Daimiel and rich lush pasture for the herds of Manchega sheep that produce the milk for the cheese. This cheese is cured for extra maturity, making it a “Cheese Master Gran Reserva” product. This is a full flavoured cheese with a firm texture, nutty taste and a tangy finish. Matured for at least 8 months. Ivory coloured with a firm dense texture and small crystals giving a long finish of hazlenuts and extra-virgin olive oil.
