An artisan unpasteurised sheep’s milk ‘Manchego’ cheese from Gomez Moreno.  Produced in La Mancha in exactly the same way as a Manchego, but technically not allowed to be called a Manchego as shavings of summer truffles are added

This cheese is cured for extra maturity, and the truffles take it to a new dimension altogether.  the cheese is Ivory coloured with a medium dense texture and small crystals giving a long finish of hazelnuts and extra-virgin olive oil, coupled with the earthiness of the truffle shavings running through the cheese.
