Embutidos Moreno Sáez is a family business, founded in 1962 by Samuel Moreno Sáez, rooted in the charcuterie traditions of Castile. Their torreznos are made through natural processes using carefully selected traditional ingredients, air dried, dry cured and oak-smoked in their own natural drying sheds. Today they are the largest producer of Torreznos de Soria in Spain — and the only one to have won the award for the best torreznos in the world. These thick, golden slabs of cured pork belly are one of Spain’s great, unapologetic pleasures: crackling skin that shatters on contact, giving way to rich, yielding meat that’s been marinated in paprika and slow-cured in the cold, dry air of the Castilian meseta. Soria’s extreme continental climate — bitterly cold winters, bone-dry summers — is what makes this product possible, and what makes it irreplaceable. You simply cannot replicate this somewhere else. Hot from the pan, the skin blisters into a deep amber shell of pure crunch, while the fat beneath turns silky and sweet. Eat them with a cold beer, alongside a glass of Ribera del Duero, or simply on their own — they need nothing else. This is Castilian soul food at its finest. And now you can have them at home.
Quite possibly (if you eat pork), the very best thing you may have ever enjoyed in your life. There are bar snacks, and then there are Torreznos de Soria — and the two should not be confused.
Cooking Instructions
The easiest way to enjoy authentic Torreznos de Soria in record time with no real cookery skills required. These marinated cured pork belly strips of the highest quality are sliced, pre-cooked my Moreno Saez and packaged to lock in all its wonderful flavours. You just need to do the final crisping and puffing up. READY IN 5 MINUTES.
You only need a frying pan with some oil and 5-10 minutes to get the crackling crispy and a final product worthy of the best chefs. Follow these simple steps and delight your family and friends from the first bite. Put about 1cm of cooking oil (olive, vegetable, sunflower – your choice). Bring it up to a medium/high heat (170C) – the classic, drop a cube of bread in, if it sizzles and goes brown, it’s the right temperature.
Carefully put the Torreznos in on their side, fry for 2-3 minutes (or until you see the skin puffing), turn them over and do the same on the other side. Finally, if more puffing is needed/desired, place on the skin side down for another minute or two. Take out and drain well on kitchen roll. Allow to cool for a few minutes and then cut into 2-3 cm chunks, and eat them and drift into a place where the whole world seems just right!
