Croccante is the Italian name for this kind of brittle, and Quaranta’s is simple and very nutty – peanuts make up 57% of the bar, bound with caramelised sugar and glucose syrup and set into a crunchy 100g slab. Nothing else goes in.
Quaranta is a family nougat maker founded in 1924 in Caravaggio, near Bergamo in Lombardy, not far from Milan, and still works from the recipe of its founder Antonio Quaranta. The company celebrated its centenary in 2024, and is known for its soft torrone, which is lighter and more yielding than the hard, snappy kind.
A good stocking filler, and nice broken into shards and put out with coffee.
