The whole of Hawkshead Relish’s black garlic range in one gift: The Original Black Garlic Ketchup, Smoky Black Garlic Ketchup and Black Garlic Pickle, 370g in total. Black garlic is garlic cooked slowly for around six weeks, with nothing added but heat and moisture, until the cloves turn black and deeply savoury – all umami, none of the raw bite.
The Original ketchup, made with 16% black garlic, balsamic vinegar and onions, became Hawkshead’s best seller within a year of launch; the Smoky version adds Halen Môn smoked sea salt and smoked water. The pickle uses whole black garlic cloves with dates, ginger, chilli, lime, cumin, coriander and turmeric – tangy, slightly spicy, and a Great Taste 3-star winner in 2018. Use the ketchups on burgers or brushed over fish, and the pickle with cheese, cold meats and pies, or alongside a beef rendang.
Made by hand in open pans in the Lake District by Hawkshead Relish, the family business Mark and Maria Whitehead founded in 1999.
The pickle and Smoky ketchup are listed as gluten free and suitable for vegans.
