Description

Gamonedo is a very unique slightly blue cheese, which is huge within cheese connoiseurs, produced from an unpasteurized blend of cows, sheep’s and goat’s milk. It has a slightly acidic and spicy taste at first with a nutty aftertaste.

The elaboration of this Gamonéu del Valle begins with the mixture of the 3 milks, cow (55%), goat and sheep with rennet and lactic ferments. The mixture rests until it forms a solid mass (curd) that is cut and left to drain. It is then introduced into the molds that give it its characteristic cylindrical shape. The cheeses are salted and allowed to dry slightly before being smoked.

Its elaboration ends with the smoking of oak and chestnut wood, which gives it very identifiable nuances on the nose and in the mouth. Finally, the Gamoneu cheese matures for at least two months in a natural cave that gives it the blue-green tones that intertwine its edges.
