A classic florentine, made without flour or eggs: flaked almonds, currants and plenty of candied orange peel are cooked with sugar, fresh butter, cream and honey into a crisp nougatine, then coated on one side in French dark chocolate with 63% cocoa. The orange and the bitter-sweet chocolate make these the more grown-up of the florentines. Twelve in a 100g box.
The florentine is said to date back to the Renaissance, when it was made by the cook of Anne de Bretagne. The recipe was revived in 1965 by the chocolatier Michel Chatillon, and since 2020 Maison de Florentins has been run by Yann Ducarouge from its artisan biscuit workshop at La Chapelle-sur-Erdre, just outside Nantes. They use mainly local, independent suppliers and make everything without preservatives, artificial flavourings or palm oil.
Lovely with coffee after Christmas dinner, or packed into a hamper with a good bottle.
