A jam with a Mediterranean feel from Hawkshead Relish: sticky preserved figs cooked with Seville oranges, orange juice and zest and lemon juice, and set with pectin. The figs give it a rich, seedy texture and the Seville oranges a bitter edge that keeps the sweetness in check. The jar is 230g.
It works both ways. Spread it on toast or sandwich it into a sponge, or use it as Hawkshead do, as a glaze for duck breasts. It is also lovely with the cheeseboard – try it with a Manchego or a soft goat’s cheese.
Hawkshead Relish have been making preserves by hand in open pans in Cumbria since 1999.
