Etxenike wild boar pate with cognac is a rich and flavourful dish that showcases the robust, gamey taste of wild boar, enhanced by the warmth and complexity of cognac. This pate is a gourmet delicacy, often enjoyed as an appetizer or as part of a charcuterie board. It is denser than a mousse, offering a satisfying meaty bite with each spread.
Cognac is added both for its flavour and to enhance the richness of the pâté. The alcohol helps to cut through the fattiness, adding a warm, slightly sweet note.
