I Pistilli are light, crunchy rolled wafers, the sort of cialde Italians serve with ice cream and desserts, filled with a soft pistachio cream. There are 24 in the 120g box. They are lovely with an espresso, crumbled over ice cream or set alongside a panna cotta or a bowl of poached fruit.
Bussy was taken over in 1967 by Luigi Vandone, a young Milanese pastry chef, who bought the Bussy Bricelets de Vevey business and began making decorative wafers. It has specialised in wafers ever since, pioneering the wafer cannolo in 1970, and is now run by his daughter Vittoria from its factory at Rho, just outside Milan. Everything is made in Italy with natural flavours and colourings, and without palm oil, hydrogenated fats or preservatives.
An easy present for anyone who loves pistachio, and a good thing to have in for serving with Christmas desserts.
