Think Mediterranean’s fig and orange cake is a sliceable Spanish fruit cake of dried figs, with dates and apricots, almonds and orange. It is sweet, chewy and fruity, with a bright citrus lift from the orange cutting through the rich, honeyed figs. A 250g cake.
Think Mediterranean is a Spanish dried fruit and nut specialist based in Villamanta, near Madrid, making its products in Spain and selling them in more than 20 countries. Their fruit cakes follow the old Spanish tradition of pressing naturally dried figs into a dense ‘bread’ or cake, using Pajarero figs from Extremadura and Valencian almonds.
Slice it thinly and serve with Manchego, a blue cheese or a mature cheddar on the Christmas cheeseboard, or enjoy it with a cup of tea or coffee.
