San Simón da Costa is a distinctive smoked Galician cow’s cheese, instantly recognisable by its conical shape – said to originate from the tradition of smoking cheese wheels in chimneys. The exterior takes on a rich ochre colour from smoking, while the semi-firm interior offers a mild, sweetly earthy flavour with gentle notes of butter and delicate smoke. Sold cut to order in 200g portions, it’s wonderful enjoyed simply on its own, melted into cooking, or paired with a Galician white wine and some crusty bread.
