This lightly smoked cheese has a smooth buttery texture and a pleasant lightly earthy taste. Hailing from Galicia, the origin of the shape of the cheese is believed to come from smoking cheese wheels in chimneys in days gone by. Now, the conical shaped cheese is immersed in hot whey to seal the outside and prevent moulds growing. Then it is smoked before ripening further for 1-2 months. The exterior of the cheese is a rich ochre colour while the interior paste is semi-firm and smooth with occasional holes and pale yellow in colour. Flavours are fairly mild and sweetly earthy with tastes of butter and delicate smoke. A delightfully smooth cheese, it is perfect on its own or when used in cooking.
