Unpasteurised sheep’s milk torta cheese made with thistle rennet from Finca Pascualete in Extremadura. Finca Pascualete specialise in sheep’s milk Torta style cheeses. Their flock graze on the herbs and grasses of the Extremaduran Dehesa. The Retorta de Trujillo is made from raw milk and matured for 2 months. It has a soft, silky ivory paste and yeasty, woolly tones with slight notes or ripe stone fruits.
