Small, crisp savoury biscuits from Okina, made with sheep’s cheese and onion. The sheep’s cheese gives them a rich, nutty savouriness and the onion a gentle sweetness, and they have the fine, crumbly crunch of a good sablé. They come in an 80g box, and Okina make them with no colourings or preservatives.
Okina is a small artisan bakery in Idaux-Mendy, in the Soule, the smallest of the Basque provinces on the French side of the Pyrenees. Pastry chef Hervé Lanouguère founded it in 2004, first making sweet biscuits and Basque cakes. In 2009 he began making savoury biscuits with local Ossau-Iraty sheep’s cheese, and Hervé Boissinot joined him as co-founder in 2013. Sheep’s cheese is at the heart of the range, alongside goat’s cheese and Roquefort versions.
Put them out with a glass of white wine, cider or a dry sherry before dinner, or alongside the cheeseboard and a bowl of olives.
