These are cantucci alla mandorla, the original Tuscan almond biscuit: a dough of flour, sugar, eggs and butter studded with almonds, baked in a log, sliced and baked again until crisp. Marabissi’s are made by hand to the recipe of the company’s founder, Signora Jole, and have a light crunch rather than a tooth-breaking one. A 120g pack.
Marabissi was started more than 60 years ago in Chianciano Terme, in the Siena hills of southern Tuscany, by Signora Jole, who baked cantucci to an old family recipe. Three generations on, the family business has grown from a small pastry shop into one of Tuscany’s best-known biscuit makers, still working by hand in the Tuscan tradition with carefully chosen ingredients.
Dip them in Vin Santo, as they do in Tuscany, or have them with coffee or tea. They are also good crumbled over ice cream or into a trifle.
