Lauenstein sum these up as “thin shell, sharp core”. Each stick is candied ginger – it makes up almost two thirds of the weight – coated in a fine layer of dark chocolate with at least 60% cocoa. The chocolate gives a clean, slightly bitter snap, and then the ginger comes through, sweet, chewy and properly fiery. There is no alcohol in them. The bag holds 100g.
Lauenstein Confiserie work at the foot of Lauenstein Castle in Ludwigsstadt, in the Franconian Forest of northern Bavaria, from the old Fischbachsmühle mill. For decades they have been making truffles and pralines by hand to traditional family recipes, and today their range runs to more than 300 pralines and chocolate specialities.
Very good with a strong coffee after dinner, and a nice present for anyone who loves ginger.
