This is the classic Breton fish soup, made in Paimpol and ready to heat. It is 28% fish – red mullet, gurnard, cod and conger – cooked down with tomato, leek, onion, garlic and olive oil, seasoned with Millac sea salt, a little chilli, thyme and bay. The result is thick, deep orange and full of flavour, with no preservatives or artificial colours or flavourings. The 500ml jar serves one or two as a main, or three or four as a starter.
L’Atelier du Cuisinier is a small seafood cannery in Paimpol, on the north coast of Brittany, set up in 2007 by Yann Trébaol, a chef trained at the Chaptal hotel school in Quimper who spent years cooking and catering before he started preserving. He still creates the recipes himself, using fish and shellfish from the local fishery, and everything is cooked in their own workshop by a team of around fifteen, with no colourings or preservatives.
Warm it gently without letting it boil and serve it the traditional way, with toasted croutons, a spoonful of rouille and a little grated cheese. A very good standby for a quiet night between Christmas and New Year.
