A jam with a Mediterranean feel from Hawkshead Relish: sticky preserved figs cooked with Seville oranges, orange juice and zest and lemon juice, and set with pectin. The figs give it a rich, seedy texture and the Seville oranges a bitter edge that keeps the sweetness in check.
It works both ways. Spread it on toast or sandwich it into a sponge, or use it as Hawkshead do, as a glaze for duck breasts. It is also lovely with the cheeseboard – try it with a Manchego or a soft goat’s cheese. La’al is Cumbrian dialect for small, and this little jar is just right for a stocking or a hamper.
Hawkshead Relish began in 1999 in Mark and Maria Whitehead’s café in Hawkshead, and still make their preserves by hand in open pans beside Esthwaite Water.
Gluten free and suitable for vegans. Keep in the fridge once opened.
