Crisp layers of filo, nuts and syrup, made by hand by Kolionasios in Ioannina, in the Epirus region of north-west Greece. The city has a baklava-making tradition going back around 400 years, and Kolionasios have been part of it for more than 30, growing from a family business into the leading baklava producer in Greece. They still roll by hand, around 50,000 baklava rolls a day, and have been recognised by both the Great Taste Awards and the iTQi taste awards in Brussels.
This is their Levantine-style baklava, and the business is still very much a family affair – the founder’s daughter, Athena, is now developing new recipes alongside the traditional Giannena baklava the family is known for.
Serve at room temperature with a strong coffee or a small glass of something sweet after dinner, or put a box out with the cheese and fruit over Christmas.
