Black garlic is ordinary garlic cooked long and slow, over about six weeks, with nothing added but heat and moisture, until the cloves turn black and take on a deep, savoury umami flavour. Hawkshead Relish’s Black Garlic Ketchup puts 16% black garlic into a sauce with onions, balsamic vinegar, tomato puree, brown sugar and olive oil. It became their best-selling product within twelve months of launch and has won a Great Taste Award and a World Innovation Award.
This box pairs the Original with the Smoky Black Garlic Ketchup, a lightly smoked version made with Halen Môn smoked sea salt from Anglesey and smoked water. Each bottle is 310g. Hawkshead suggest brushing it over cod before cooking or piling it on a beef burger; it is also very good with steak, in a bacon sandwich or stirred through gravy.
Hawkshead Relish was started in 1999 by Mark and Maria Whitehead, who made chutneys for the café they ran in the Lake District village of Hawkshead. When foot and mouth emptied the Lakes of visitors in 2001 the chutneys became the business, and today more than 100 products are made by hand in traditional open pans in a restored 16th-century barn on the edge of Esthwaite Water. They have won more than 60 Great Taste Awards, and Mark and Maria both hold MBEs.
