A simple, fruit-heavy jam from Hawkshead Relish: raspberries, sugar, a little vanilla extract and pectin, and nothing else. It is made with 49g of fruit for every 100g of jam, which gives it a rich, vivid colour and a proper sharp raspberry flavour, softened by the vanilla. The Grande Couture jar holds 275g.
Spread it on scones with clotted cream, sandwich it into a Victoria sponge, or stir it through rice pudding or yoghurt. The Italian-style Couture jar makes it an easy present.
Made by hand in open pans in the Lake District by Hawkshead Relish, who started out making preserves for their café in Hawkshead in 1999.
Gluten free and suitable for vegans. Keep in the fridge once opened.
