A rich and indulgent alioli made using oak-smoked olive oil from Toledo. This oil is naturally smoked over the fires that are used to dry the peppers which make Pimentón de la Vera, with holm oak wood, in a process taking over 15 days.
The garlic gives it an intense aroma and a full, savoury flavour and this condiment is traditionally served alongside paella, arroz negro and other rice dishes. It is also a delicious accompaniment to grilled meats or with simple boiled vegetables.
Alternatively use it instead of mayonnaise for use in sandwiches, particularly with fish or chicken.
The Oliva family produce La Chinata (one of Spain’s best-smoked paprikas), distinguishable by its iconic red tin, Javier Oliva has just started making this artisan smoked oil and it is already proving popular with Spanish chefs.
INGREDIENTS
Sunflower oil, Finca la Barca smoked olive oil (27.5%), garlic (7%), water, vinegar, pasteurized EGG yolk, lemon juice (SULPHITES) salt, sugar, modified corn starch, stabilisers: xanthan gum and alginate, smoke flavouring, antioxidant: EDTA, preservative: potasium sorbate.
