Chocolaterie Carré is a Belgian family business started by Dirk Naert and his wife Mieke with no money and no customers, and it has spent around three decades specialising in the tricky art of liquid-filled chocolates – liqueurs and wine at first, and later its well-known beer-filled ChocOBeer pralines, made with Belgian breweries. They still regard chocolate-making as a craft that should never be fully automated.
