Twelve to fourteen small Atlantic sardines, lightly smoked and packed by hand in olive oil, then left for almost a year so the smoke settles into the oil and the fish. The result is a gentle, rounded smokiness rather than anything harsh. Net weight 115g (81g drained).
Ar de Arte is a Galician conservas company based in Malpica de Bergantiños on the Costa da Morte in A Coruña. It works with small artisan canneries on seasonal fish and shellfish from the Galician rías, all packed by hand, and every tin is wrapped in an original design by a Galician artist – this one by young artist Paula Grangel, through a collaboration with the Pablo Picasso art school in A Coruña.
Serve on toast with a squeeze of lemon, or put the tin out with drinks. A lovely present for anyone who collects good-looking tins.
