500g of Mayo

200g of small prawns, squeezed and drained of water

2 dessert spoons of spring onion finely chopped (using dark green and white parts in equal measure)

2 dessert spoons of parsley finely chopped

Juice of half a lemon

½ teaspoon of salt and pepper each
