An unpasteurised ewe’s milk cheese from Cuenca. The dairy is a family business and the milk is collected from the dairy’s own herds and local farms.
This is a truly artisan Manchego style cheese, with a limited production, resulting in subtle and complex flavours. It has a compact paste and is nutty with savoury sweetness.
Full, fruity, buttery and clean with a pleasing undertone of rosemary. Encased in pork lard and dried rosemary leaves.
