Sherry vinegar is one of the most distinctive tastes in Spanish cooking and this example is made with PX dessert sherry grapes. Made in the balsamic style, with grape added to vinegar, and aged in American oak barrels for 12 years, the result is a delicious vinegar with aromas of dried figs, raisins and plum. Using fine sherries, and ageing them carefully in American oak, they produce distinctive and delicious vinegars in a number of different styles.
The rich sweetness similar to fine balsamics is from concentrated sugars in the sun-dried Pedro Ximénez grapes. Aged in oak barrels, giving a smooth and nutty finish. Perfect in salad dressings, to cook with, dip our sourdough bread in and just to drink neat!
