Description

Made by the El Bosqueno dairy, this exquisite cheese is made with 100% Payoya goats milk, these indigenous Andalusian goats graze freely in the Sierra de Cadiz mountain range. The cheese is cured for 4 months in natural caves and then marinated in extra virgin olive oil and oloroso Sherry.  This gives is a beautiful deep brown hue to the rind and the taste is superb.  a medium hard cheese with a strong flavour and the sherry notes are well integrated into the cheese and pack a punch.  This is an extra special cheese!  This cheese also  won double gold at the world cheese awards in 2016.
