Cashews roasted by hand with gochujang, the fermented Korean chilli paste used in Korean barbecue, together with whole cane sugar, hot and sweet La Vera paprika and a little natural smoke. They are sweet and sticky to start, then the chilli heat and smokiness come through – a Spanish nod to Korean grilling. An 80g pack.

Finca La Rosala is a family business in Calzada de Calatrava, in the province of Ciudad Real in Castilla-La Mancha, started in 2013 by Pedro Ciudad Imedio with his wife Encarni and their two children. Pedro planted pistachios on La Rosala, a farm inherited from his wife’s mother, and when Angelito, a local baker who had long roasted peanuts in his pastry shop, came to retire, Pedro learned his methods so the craft would not be lost. The nuts are still roasted by hand on trays, pastry-style, at under 145°C for around 40 minutes and turned every 7 or 8 minutes so they cook evenly.

Excellent with a cold beer or a glass of cava, and a good bag to have in for guests over Christmas.

Ingredients: cashews (85%), whole cane sugar, gochujang (fermented rice paste, fermented rice syrup, water, hot pepper powder, salt, alcohol, yeast extract, soybean essence, rice powder, onion, carrot, garlic), salt, hot La Vera paprika, natural barbecue flavouring, natural smoke flavouring, shellac, sweet La Vera paprika. Contains cashew nuts and soya. Gluten free.
