Inside are a smooth, spreadable duck mousse, a traditional duck terrine made in the old-fashioned way, and a duck terrine with orange, which brings a gentle citrus lift to the rich meat. Between them they cover the classic range of textures, from silky to coarse and rustic.
Ducs de Gascogne was founded in 1953 by Gabriel Dubarry in Gimont, in the Gers. He began by selling at trade fairs and by mail order from 1958, and the business stayed in the Dubarry family for three generations, becoming one of the best-known names in Gascon foie gras, terrines and gourmet hampers.
Chill the tins, then serve on toast or country bread with cornichons and a glass of red. A good one for a hamper, or for anyone who loves French food.
