In 2016,the husband and wife team behind Quesos y Besos (cheeses & kisses) quit their day jobs, and decided to move back to their home town of Guarromán, on the out skirts of Sierra Morena ( Sierra sur de Jaen) to bring up their children and start making cheese. Coming from a long line of shepherds this should have come naturally to them. However, like all visionaries they didn’t want to do any thing the easy way and so, as opposed to making the traditional cheese of the region, they decided they wanted to make a lactic cheese. This is probably the oldest form of fermentation as it relies on bacteria to break down the lactose in the milk into lactic acid. Using milk from their own herd of Malagueña goats which roam freely in the local area, able to graze on numerous wild flowers and herbs, they initially created Olavidia and then a broader range of wonderful cheeses.
This exceptional ash-covered goats milk cheese from Quesos y Besos is outstanding. Made from the pasteurised milk of Malagueña goats cured for a minimum of 20 days. Whilst this may seem short, it is produced through one of the oldest forms of fermentation, with bacteria which is naturally occurring in the milk. This ensures a wonderful semi-soft texture, and a pronounced depth of flavour which is only complemented by the layer of ash covering this unique cheese. On the nose it has a soft mushroom aroma, which develops with age. On the palate there are notes of salt, butter, and wild meadow flowers, with a lingering nutty aftertaste
